Premium Yunlin eel is grilled at 150°C for 10 minutes, paired with rice crackers fried at 160-170°C for 1 minute to achieve a perfect crunch. Rich in vitamins, the tender eel combined with the crispy cracker creates a creative, upscale twist on classic eel rice.

Mushroom Cappuccino Mousse with Devil Quail Egg:

Served in an eggshell, this dessert features nutrient-rich quail eggs, known as the “best of eggs.” Thinly sliced shiitake mushrooms from Taichung’s Xinshe are seasoned with thyme, rosemary, olive oil, and pepper, then whipped into a smooth mousse with cream cheese and whipped cream—creating a silky texture that mirrors the luxurious feel of the “Diamond Collection” skincare line.

Reflecting Chantecaille’s commitment to nature and sustainability, this dish features nutrient-rich natural ingredients inspired by the healthy Mediterranean diet. With yogurt, olives, and abundant vegetables symbolizing new life, it leaves the skin glowing with a fresh, revitalized radiance.
